Tabouleh :)
This homemade tabouleh is SO refreshing!
Ingredients: 3/4 cup bulgur wheat, 1 cup boiling water, 1 chopped tomato, 1/2 chopped and peeled cucumber, 1/4 chopped red onion, 1/3 cup fresh parsley, 1/3 cup fresh basil. Dressing: 1/4 cup extra virgin olive oil, juice from half a lemon, a dash of pepper and salt.
Soak the bulgur wheat with the boiling water and cover for 1/2 hour. meanwhile, chop up all the veggies and prepare the dressing. After the bulgur wheat has set for at least a half hour, mix everything together and enjoy :) Bulgur wheat can be found at health food stores and many super market.
